A Cold, Nutritious, Summertime Treat

So nice! So easy! Cool down on hot summer days with this simple, 4-ingredient “ice cream” recipe: the bananas give structure to this gluten-free, nut-free, low-fat, optionally dairy-free treat; nutritious ingredients make it guilt-free. Dairy-free? Maybe. Pineapple Coconut variation is dairy-free as outlined. Any variation is optionally dairy-free, just use a non-dairy alternative in place of the milk. Higher-fat non-dairy alternatives will yield a creamier taste.

Carb Content: 22 - 29g per cup. Carb Factor of 0.16 - 0.25 grams of carbs per gram weight. (See below for details.)

 

INGREDIENTS:

Berry Banana “Ice Cream”

  • 3 (400g) bananas = 80g carbs, trace amounts of fat
  • ½ cup (70g) Frozen Mixed Berries = 6g carbs. trace amounts of fat (I used Europe’s Best Field Berry Mix)
  • ½ cup Milk = 6g carbs, 2.5g fat in 2% Milk (Optional: replace milk with non-dairy alternative)
  • 1 tsp Vanilla = 0g carbs, 0g fat

Chocolate Banana “Ice Cream”

  • 3 (400g) bananas = 80g carbs, trace amounts of fat
  • ½ cup (140g) Dark Chocolate Chunks = 75g carbs, 48g fat (I used Lindt Dark with Sea Salt chocolate bar... because I LOVE it! 🙂 But be aware that this product may contain nuts. Use another source of chocolate chunks if a nut allergy applies.)
  • ½ cup Milk = 6g carbs, 2.5g fat in 2% Milk (Optional: replace milk with non-dairy alternative)
  • 1 tsp Vanilla = 0g carbs, 0g fat

Pina Colada “Ice Cream”

  • 3 (400g) bananas = 80g carbs, trace amounts of fat
  • ½ cup (105g) Frozen Pineapple Chunks = 12g carbs, 0g fat (I used President’s Choice PC Pineapple Chunks)
  • ½ cup Coconut Milk = 3g carbs, 12g fat (I used Grace canned Coconut Milk)
  • 2 tbsp Pineapple Juice = 4g carbs, 0g fat (I used President’s Choice PC 100% Pineapple Juice, carton)

INSTRUCTIONS:

1.

Peel 3 bananas. Cut into 1” chunks. Freeze solid (2-3 hours).

2.

Place all ingredients (frozen bananas, frozen berries, vanilla and milk) in a food processor or blender. Puree until smooth.

3.

Transfer into a loaf pan and smooth with a spatula. Freeze solid (~1 hour).

4.

Scoop, garnish with fresh berries, banana chunks, pineapple chunks, shredded coconut, chocolate chips, slivered almonds or chopped walnuts, chocolate sauce, strawberry or Rolo Quik, or your favourite sundae toppings… and enjoy!

Suggested Variations:

  • Peach Nice Cream (use frozen peaches instead of frozen berries)
  • Strawberry Banana
  • Blueberry Banana
  • Chocolate Peanut Butter (with 2 tbsp Peanut Butter + 1 tbsp Cocoa Powder + 1/4 cup Milk)
  • Cherry
  • Black Forest (Chocolate and Cherries)

CARB CONTENT:

Nutrient Content by Volume:

1 cup of Berry Banana Nice Cream has 23g of carbs and minimal fat (less than 1g).

1 cup of Chocolate Banana Nice Cream has 29g of carbs and 8.6g of fat.

1 cup of Pina Colada Nice Cream has 23g of carbs and very little fat (less than 3g).

 

Nutrient Content by Weight:

100g serving of Berry Banana Nice Cream contains 16g of carbs, for a Carb Factor of = 0.16.

100g serving of Chocolate Banana Nice Cream contains 25g of carbs and 7g of fat, for a Carb Factor of = 0.25 and a Fat Factor of 0.07.

100g serving of Pina Colada Nice Cream contains 17g of carbs, for a Carb Factor of = 0.17.
