Total Yield: 24 mini corn meal muffins (or 12 regular-size)
Carb Content: 12.2g of carbs for each mini muffin (24.4g of carbs for each regular-size muffin)

INGREDIENTS:

  • 1¼ cup yellow cornmeal = 145g of carbs
  • ¾ cup gluten-free flour blend = 84g of carbs (or if GF isn’t your thing, replace with the same amount of regular wheat flour)
  • 2 tsp baking powder = 0g of carbs
  • ½ tsp baking soda = 0g of carbs
  • ½ teaspoon salt = 0g of carbs
  • 2 large eggs = 2g of carbs
  • ¾ cup Greek yoghurt, plain = 5g of carbs
  • ½ cup milk = 6g of carbs
  • 3 tbsp honey = 51g of carbs
  • ¼ cup melted butter = 0g of carbs (or if you prefer, replace with coconut oil)

INSTRUCTIONS:

Preheat oven to 400º F.

Grease a 24-mini-muffin pan (or a regular 12-muffin pan).

In a large bowl, whisk together the cornmeal, flour/GF flour blend, baking soda, baking powder and salt.

In a medium bowl, lightly beat the eggs. Add the yoghurt, milk, honey and melted coconut oil or butter. Whisk briskly to add air to the mixture. (Adding air helps to lighten up the texture in GF baking.)

5.

Add the wet ingredients to the dry ingredients and fold together until just incorporated. (Over-stirring will deflate the batter.)

6.

Fill muffin cups evenly then bake 10-12 minutes or until the muffins are just cooked through. Check early, to avoid over-baking (which will dry them out).

 

Serve warm with butter or jam.

Leftovers should be stored in the fridge. To keep them from drying out when reheating, wrap in a damp paper towel before warming in microwave.
