Yum it up for Dad this Father's Day!

This recipe may seem like it’s na-cho ordinary diabetes-friendly recipe, but kids with #T1D can eat the same things as their peers, we just need to count the carbs (and perhaps fat) and cover them with enough insulin at the right time! These Tater Tot Nachos are a quick, easy-to-make twist on conventional nachos (kids will have fun helping!) and are fully customizable to include your family’s favourite toppings. They hit the spot for a busy weekday supper, for a football game snack, or to treat dad to more than just a cheesy joke on Father’s Day.

INGREDIENTS:

  • 1 (800g) bag Tater Tots [I used McCain’s Tasti-Taters: 144g carbs; 75g fat]
  • 3/4 c (90g) grated cheese [I used Superstore’s No Name shredded cheddar & Monterey Jack cheese blend: 3g carbs; 27g fat]
  • sprinkle of finely chopped onions [I used red and green onions: 2g carbs; 0g fat]
  • 1/3 cup (40g) crumbled bacon [I used Hormel Real Bacon, Crumbled: 0g carbs; 8g fat]
  • 1/4 cup (50g) chopped pepperoni  [I used Freybe Honey Garlic Pepperoni Sticks: 2g carbs; 15g fat]
  • 10 cherry tomatoes, quartered [2g carbs; 0g fat]
  • 1/2 cup (30g) chopped sweet red peppers [2g carbs; 0g fat]

Optional: Any other topping that your family enjoys on nachos! Like...

    • sliced black olives
    • corn
    • black beans
    • avocado chunks
    • seasoned ground beef
    • shredded chicken
    • shredded lettuce
    • crumbled tofu
    • jalapeños
    • chopped fresh cilantro
    • sour cream
    • guacamole
    • salsa
    • pico de gallo

INSTRUCTIONS:

In a single layer on a sheet pan, bake the Tater Tots according to package directions.

Once they are browned, leave them in the same pan and sprinkle cheese evenly on top, followed by onions, bacon and pepperoni.

Return to oven for 5 minutes, or until cheese is melted and bubbling.

Remove the pan from oven. Immediately sprinkle the peppers and tomatoes evenly on top.

Pile it onto Dad’s plate and... enjoy!
