DRAGON BITES carb-counted recipe

A family-friendly, mostly healthy (sometimes treat-y!) easy recipe for families living well with Type 1 Diabetes.

This whipped cream + raspberry summer dessert is perfect when the berries are at their best! It’s not too sweet to send blood sugars into orbit; but it is rich. We like to serve on its own or heaped on top of berries alongside lemon cookies. Use any berries that are in season.

INGREDIENTS:

  • 1 cup Whipping Cream (0g of carbs)
  • 1 cup (120g weight) Raspberries (6g of carbs), plus more as desired to garnish.
  • 2 Tbsp (24g weight) Granulated Sugar (24g of carbs)
  • ½ tsp Vanilla Extract (0g of carbs)
  • Optional: Raspberry Liqueur for a grown-up treat.

INSTRUCTIONS:

I learned to make whipped cream from my Gramma who of course never had a recipe. This is her method and our measurements.  ~Jennifer

1.

Measure out sugar in a small bowl or measuring cup. Set aside.

2.

Pulse berries in food processor until just broken down.

3.

Place cold whipping cream in glass dish. Beat on high speed for 3 minutes; while beater is going sprinkle sugar over cream. Continue to beat until stiff (2 – 3 more minutes); lift beaters out of cream, whipped cream should remain stiff, in peaks. If not, beat it again for a bit.

4.

Fold in raspberries and vanilla with a spatula.

If making ahead, the whipped cream/raspberry mixture will keep for 2 – 3 hours (refrigerated).

5. (Optional)

Garnish with additional raspberries. (Add 2g of carbs for 1/3 cup of extra raspberries.)

6. (Optional)

Drizzle with raspberry liqueur (Add 3g of carbs for each 1/2 Tbsp of raspberry liqueur) or other in-season berry and corresponding liqueur.

CARB CONTENT:

Total yield:

2 ¼ cups of whipped cream/raspberry mixture (~348g finished weight) with 30g of Carbs.

¼ cup of Raspberry Fool contains 3.3g carbs.

Nutrient Content by Weight:

100g serving of Raspberry Fool contains just under 9g of carbs, for a Carb Factor = 0.09.
