Southwest Beef Chili

DRAGON BITES carb-counted recipe

A family-friendly, mostly healthy (sometimes treat-y!) simple recipe for families living well with type 1 diabetes.

An easy, one-pot, naturally gluten-free, high fibre, hearty warm-up for these cold winter days!

INGREDIENTS:

0.5 kg (1 – 1-1/2 lbs) lean ground beef = 0g of carbs

1 small onion, chopped = 10g of carbs
2 cloves (2 tsp) minced garlic = 2g of carbs

1 tbsp chili powder = 0g of carbs
1 ½ tsp cumin = 0g of carbs
1 ½ tsp dried oregano = 0g of carbs
¼ teaspoon ground black pepper = 0g of carbs

1 can (341ml) corn niblets = 33g of carbs
1 can (540 ml) white kidney beans = 54g of carbs
1 can (540 ml) black beans = 58g of carbs
1 can (796ml) diced tomatoes, with juice = 32g of carbs
1 can (398 ml) tomato sauce = 22g of carbs
1 can (284 ml) mushrooms = 3g of carbs
1 ½ cups Chunky Salsa = 18g of carbs

3 tbsp Fresh Cilantro, chopped
2 Green Onions, chopped

INSTRUCTIONS:

1. In a large stock pot, on medium heat, lightly brown ground beef. Drain if needed.
2. Add onion and garlic and cook until softened.
3. Add the rest of ingredients. Simmer for 30 minutes.
4. Garnish with cilantro and green onions.
